Deliciously balanced banana bread with whole wheat flour, reduced sugar, and light sour cream for a healthier twist.
Ingredients:
  • 2 tablespoons white sugar
  • 1 teaspoon ground cinnamon
  • 0.5 cup butter
  • 1.5 cups white sugar
  • 3 eggs
  • 6 very ripe bananas, mashed
  • 1 (16 ounce) container reduced fat sour cream
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon salt
  • 3 teaspoons baking soda
  • 2.5 cups all-purpose flour
  • 2 cups white whole wheat flour
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to a toasty 300 degrees F (150 degrees C) and generously grease four 7x3-inch loaf pans.
  • Combine 2 tablespoons of white sugar and 1 teaspoon of cinnamon in a small bowl. Lightly dust pans with the sugar mixture.
  • In a large bowl, use an electric mixer to whip together butter and 1 1/2 cups of sugar until creamy. Add eggs, mashed bananas, sour cream, vanilla extract, and 2 teaspoons of cinnamon. In a separate bowl, combine salt, baking soda, all-purpose flour, and whole wheat flour. Gently mix the flour into the butter mixture, then fold in nuts. Divide the mixture into the prepared pans.
  • Bake in a hot oven until a toothpick comes out clean when inserted in the center, which should take around 1 hour.
