Healthier banana split muffins with applesauce replacing butter/oil, studded with chocolate chips and dried cherries.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1 cup applesauce
  • 1 egg
  • 3 ripe bananas, diced
  • 1 cup mini chocolate chips
  • 1 cup dried cherries
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously coat a muffin tin with cooking spray.
  • In a medium bowl, mix together flour, sugar, baking soda, and salt.
  • Combine the applesauce and egg in a separate bowl. Fold the applesauce mixture into the flour mixture. Gently mix in the bananas, chocolate chips, and dried cherries.
  • Fill each cup of the prepared muffin tin almost to the top with the batter using a spoon.
  • Bake muffins in the preheated oven for about 20 minutes until lightly browned. Allow them to cool for 5 minutes before transferring to a wire rack to cool completely.
