Healthier banana muffins with less saturated fat, less fat, and fewer calories. Enhanced with extra banana for sweetness and whole wheat flour for improved texture.
Ingredients:
  • 1 2/3 cups Gold Medal™ whole wheat flour
  • 2/3 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 cup mashed very ripe bananas (2 to 3 medium)
  • 3 egg whites
  • 1/4 cup canola oil
  • 1/4 cup fat-free (skim) milk
  • 1/3 cup miniature semisweet chocolate chips
  • 1 tablespoon sugar
  • 1/8 teaspoon ground cinnamon
Instructions:
  • Preheat oven to 375°F and prepare a muffin tin by spraying the bottoms only of 12 regular-size muffin cups with cooking spray or lining them with paper baking cups.
  • Combine flour, 2/3 cup sugar, baking powder, baking soda, 1/2 teaspoon cinnamon, and salt in a large bowl.
  • Combine ripe bananas, egg whites, oil, milk, and vanilla in a medium bowl, stirring until mixture is smooth. Add this mixture to the flour mixture, stirring only until flour is moistened. Gently fold in chocolate chips, and distribute the batter evenly among the muffin cups.
  • In a small bowl, combine topping ingredients. Evenly sprinkle over batter in cups.
  • Bake for 20-24 minutes until golden brown and a toothpick inserted in the center comes out clean. Then, promptly transfer the muffins from the pan to a cooling rack.
