Lightened up recipe with fewer calories and less fat, plus more fiber. Swap egg whites for whole eggs to make it healthier.
Ingredients:
  • 1 1/2 cups Gold Medal™ whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup sugar
  • 1/4 cup canola oil
  • 2 egg whites
  • 1 cup mashed ripe bananas (2 large)
  • 1/4 cup fat-free (skim) milk
  • 1 teaspoon vanilla
  • 1/4 cup chopped walnuts or pecans, toasted*
Instructions:
  • Preheat your oven to 350°F. Grease the bottom of an 8x4-inch or 9x5-inch loaf pan with shortening or cooking spray. Combine flour, baking powder, baking soda, salt, and cinnamon in a medium bowl.
  • Combine sugar, oil, egg whites, bananas, milk, and vanilla in a large bowl, stirring until fully blended. Mix in the flour mixture until well combined, then fold in the walnuts. Transfer the batter into the pan.
  • Bake the 8-inch loaf for 55-62 minutes, or the 9-inch loaf for 45-52 minutes until a toothpick inserted in the center comes out clean. Let it cool for 5 minutes, then remove from the pan to a rack. Allow it to cool completely for about 1 hour before slicing.
