Skinny Banana Brownie Skillet

Grilled dessert with essential nutrients. High in vitamin C, calcium, and fiber. 70% less saturated fat and 100% less cholesterol than original recipe.
Ingredients:
  • 1 cup semisweet chocolate pieces
  • 2/3 cup Gold Medal™ whole wheat flour
  • 2/3 cup sugar
  • 1/3 cup nonfat dry milk powder
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 2 egg whites, lightly beaten
  • 1/3 cup buttermilk
  • Nonstick cooking spray
  • 1 large banana, sliced
  • Lemon juice
  • 2 tablespoons powdered sugar
  • 1 1/2 cups sliced fresh strawberries
  • 1 1/2 cups frozen fat-free whipped dessert topping, thawed
Instructions:
  • Combine chocolate pieces, flour, sugar, dry milk powder, cocoa powder, cinnamon, baking soda, and salt in a large bowl, then create a well in the center.
  • Combine egg whites, buttermilk, and vanilla in a medium bowl, then mix into the chocolate mixture until well combined.
  • Preheat the oven to 350°F. Grease an 8- to 9-inch springform pan or cast-iron skillet with nonstick cooking spray. Pour in the batter and arrange banana slices on top. Lightly brush the bananas with lemon juice. Bake for 35 to 40 minutes until a toothpick inserted in the center comes out clean and the brownie edges start to pull away from the sides. If using a springform pan, let it cool on a wire rack for 10 minutes, then remove the side of the pan and let it cool for another 30 minutes. If using a skillet, let it cool on a wire rack for 30 minutes before serving warm. Finish by dusting with powdered sugar, adding strawberries, and a dollop of whipped topping.
  • For a grilled version: Prepare an 8- to 9-inch cast-iron skillet with a light coating of nonstick cooking spray. Alternatively, stack two 8-inch square or round disposable foil pans for a double-thick layer and coat lightly with nonstick cooking spray. Spoon the batter into the prepared skillet or foil pan and top with banana slices. Gently brush the banana slices with lemon juice.
  • Prepare the grill by arranging medium coals around the edges for medium-low heat. Place a pan or skillet in the center of the grill, away from direct heat. Cover and grill for 25 to 30 minutes, until brownie edges separate from the pan. For a gas grill, preheat then adjust to medium heat for indirect cooking. Follow the same grilling instructions. Let it cool for 30 minutes before serving. Top with powdered sugar, strawberries, and whipped topping.
