Healthy and sweet banana bread with reduced sugar and no butter.
Ingredients:
  • 40g (1/2 cup) desiccated coconut
  • 100g (1 cup) coconut flour
  • 160g (1 1/4 cups) wholemeal spelt flour
  • 14.00 gm baking powder
  • 2.50 gm ground cinnamon
  • 50g (1/3 cup) coconut or rapadura sugar
  • 3 large bananas, mashed (310g flesh), plus 1 extra, for decoration
  • 80ml (1/3 cup) olive oil
  • 160ml (2/3 cup) oat, soy or rice milk
  • Maple syrup, to serve (optional)
Instructions:
  • Preheat your oven to 180C/160C fan forced. Grease and line a deep loaf pan (22.5 x 8.5cm base) with non-stick baking paper, leaving the long sides to hang over the edges.
  • In a large bowl, mix together the flours, baking powder, coconut, cinnamon, and sugar. Create a well in the center and stir in the banana, eggs, oil, and milk until combined. Pour the mixture into the prepared pan and smooth the surface. Thinly slice the remaining banana and layer the slices neatly over the entire loaf.
  • Bake for 45-55 minutes or until a skewer inserted in the center comes out clean. Serve sliced with a drizzle of maple syrup, if desired.
