Healthy banana and zucchini bread recipe

Elevate your banana bread with hearty oats, crunchy nuts, and nutritious zucchini for a wholesome twist.
Ingredients:
  • 235g (11 ⁄2 cups) wholemeal spelt flour
  • 50g (1 ⁄4 cup) coconut sugar
  • 35g (1 ⁄3 cup) rolled oats
  • 40.00 ml chia seeds
  • 20g walnut halves
  • 8.00 gm baking powder
  • 2.50 gm ground cinnamon
  • 1.25 gm bicarbonate of soda
  • 125ml (1 ⁄2 cup) buttermilk
  • 60ml (1 ⁄4 cup) light extra virgin olive oil
  • 260g (1 cup) mashed ripe banana
  • 1 small (about 120g) zucchini, coarsely grated
  • Honey with honeycomb, to serve (optional)
  • Fresh low-fat ricotta, to serve (optional)
  • 10.00 gm rolled oats
  • 1 tsp chia seeds
  • 3.20 gm coconut sugar
Instructions:
  • Preheat your oven to 180°C/160°C fan forced. Grease and line a 9.5 x 19.5cm loaf pan, letting the parchment paper hang over the edges.
  • Prepare the topping by mixing all ingredients in a small bowl and set it aside.
  • In a large bowl, mix together flour, coconut sugar, oats, chia seeds, baking powder, cinnamon, and bicarbonate of soda. Create a well in the center and gently fold in walnut halves.
  • Mix together buttermilk, oil, and eggs in a jug, then pour into the well. Add in the banana and zucchini. Gently stir until just combined. Transfer the mixture into the prepared pan and sprinkle with the topping.
  • Bake for 70 minutes, or until a skewer inserted in the center comes out clean.
  • Allow the mixture to rest in the pan for 10 minutes to slightly cool before transferring it to a wire rack to completely cool.
  • Drizzle honey over and serve with a dollop of optional low-fat ricotta.
