Fig and Banana Loaf

Healthy banana fig bread, perfect for breakfast or tea time. Can swap figs for dates or raisins.
Ingredients:
  • 1 cup soy milk
  • 0.5 cup firmly packed brown sugar
  • 2 tablespoons olive oil
  • 1.3333333730698 cups mashed ripe bananas
  • 2.5 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup dried figs, chopped
Instructions:
  • Preheat your oven to a cozy 350 degrees F (175 degrees C) and give two 8.5 x 4.5 inch pans a gentle greasing.
  • Combine eggs, soy milk, brown sugar, oil, and mashed bananas in a bowl, mix until well blended, and set aside. In a separate bowl, combine whole wheat flour, baking powder, salt, and cinnamon. Pour in the egg mixture and stir until just combined. Divide batter into prepared pans.
  • Bake in the preheated oven for about 55 minutes or until a toothpick inserted in the center comes out clean. Let it cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
