Fig and three-cheese tart

Enhance savory starters with ripe figs paired with cheese for a delicious twist.
Ingredients:
  • 6 figs
  • 20.00 ml balsamic vinegar
  • 1 sheet frozen butter puff pastry, thawed, halved
  • 100g soft goat's cheese, crumbled
  • 100g grated mozzarella
  • 100g grated cheddar
  • 4 slices prosciutto
  • Rocket leaves, to serve
Instructions:
  • Preheat the oven to 180°C. Line a baking tray with parchment paper. Arrange figs in a small baking dish, sprinkle with brown sugar, balsamic vinegar, and 2 tablespoons of water. Roast for 15 minutes. Let cool before serving.
  • After cooling the figs, transfer the pastry sheets onto the baking tray. Top with another piece of baking paper and place a second tray on top to press the pastry down. Bake in the oven for 15 minutes or until lightly golden. Allow it to cool slightly before proceeding.
  • Combine the goat's cheese, mozzarella, and cheddar in a bowl, seasoning generously with sea salt and freshly ground black pepper. Spread the cheese mixture evenly over the pastry sheets, leaving a 1cm border. Bake for an additional 10 minutes or until the cheese is melted and golden.
  • Tear prosciutto slices and figs into bite-sized pieces. Top cheese tarts with prosciutto, figs, and rocket leaves. Drizzle with reserved fig pan juices before serving.
