Delicious 5-ingredient chicken and fig wellingtons with crispy pastry.
Ingredients:
  • 4 small chicken breast fillets
  • 82.50 ml fig, date & balsamic chutney
  • 3 sheets butter puff pastry, partially thawed
  • Olive oil spray
  • 2 bunches broccolini, trimmed
  • 250g cherry truss tomatoes
  • Fig, date & balsamic chutney, plus extra to serve
Instructions:
  • Preheat your oven to 230C/210C fan-forced and line a large baking tray with baking paper.
  • With precision, carve a pocket into each chicken breast using a small, sharp knife. Stuff each pocket generously with flavorful chutney.
  • Cut the pastry into 16 strips that are 4cm wide. Lay out 4 strips slightly overlapping on a board. Put a chicken breast, top-side down on top. Season with salt and pepper. Fold the pastry over the chicken to cover it completely. Trim any excess pastry. Place the parcels seam-side down on the tray. Repeat with the rest of the pastry strips and chicken breasts.
  • Coat pastry with a light mist of oil and sprinkle with salt and pepper. Bake for 25 to 30 minutes, then add vegetables to the tray for the final 10 minutes until chicken is fully cooked and vegetables are tender. Serve with a dollop of chutney on the side.
