"Quick and easy chicken taco soup made with rotisserie chicken, broth, black beans, salsa, and frozen pepper medley. Top with tortilla chips for extra crunch."
Ingredients:
  • 1 jar 1lb thick and chunky salsa
  • 4 cups cooked rotisserie chicken - skinned, boned, and meat shredded
  • 1 (32 fluid ounce) container low sodium chicken broth
  • 2 cans (15.5 ounce) reduced-sodium black beans, rinsed and drained
  • 1 14.4 oz bag frozen tri-colored pepper and onion medley
Instructions:
  • Blend together a can of black beans and half a jar of salsa until you achieve a smooth consistency.
  • In a large pot over medium-high heat, mix the black bean mixture, the remaining can of black beans, the rest of the salsa, shredded chicken, pepper and onion medley, and chicken broth.
  • Simmer gently until warm, approximately 10 minutes.
