5-ingredient chicken pesto pasta: Quick and delicious weeknight meal.
Ingredients:
  • 400g Rigatoni pasta
  • 190g jar Pesto Genovese
  • 400g cooked chicken breast, torn into large pieces
  • 100g baby spinach or rocket leaves
  • 40g parmesan, finely grated, plus extra to serve
Instructions:
  • Cook the pasta in a large pot of boiling water until al dente according to package instructions. Drain, reserving 60ml (1/4 cup) of the cooking water.
  • Place the cooked pasta back into the pan along with the pesto and reserved water. Toss everything together until well combined, then add the cooked chicken and spinach or rocket. Gently mix everything together until combined.
  • Combine the parmesan with the pasta and toss gently. Portion the pasta into serving bowls, sprinkle with extra parmesan, and season to taste.
