Crispy 5-ingredient dish perfect for any occasion - simple and delicious!
Ingredients:
  • 320 g sheet of all-butter puff pastry (cold)
  • 4 x 120 g free-range skinless chicken breasts
  • 4 heaped teaspoons green pesto
  • 400 g ripe cherry tomatoes on the vine
  • 400 g green beans
Instructions:
  • - Preheat the oven to 220ºC/425ºF/gas 7. Divide the pastry into 8 strips. Pound the chicken breasts to an even thickness. Season and spread pesto on the chicken. Wrap with pastry strips. Brush with olive oil. - Lightly coat tomato vines with olive oil, season, and arrange in a tray. - Roast chicken on top shelf and tomatoes below for 20 minutes until golden. - Cook beans in boiling salted water for 7 minutes until tender. Drain and toss with tomatoes. - Slice chicken and serve on top of beans with whole tomatoes.
