Flaky puff pastry filled with cheese and pesto in a festive Christmas tree shape, a must-have appetizer for any holiday gathering.
Ingredients:
  • 1 (14 ounce) package frozen puff pastry, thawed
  • 2 teaspoons all-purpose flour, or as needed
  • 0.333 cup prepared pesto sauce, divided
  • 2 ounces Parmigiano-Reggiano cheese, divided
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and line 2 baking sheets with Silpat® silicone liners.
  • Roll out the pastry into a 14-inch square, dusting with flour as needed.
  • Cut the dough into a triangle shape and carefully transfer it to a baking sheet lined with parchment paper. Chill in the refrigerator.
  • Overlapping the long edges of the remaining 2 pieces of pastry by about ½ inch, form a second triangle. Roll to slightly flatten it, then place it on the second prepared baking sheet and chill until needed.
  • Take the triangle out of the refrigerator. Transfer the silicone liner and pastry from the pan to the counter. Trim 1 ½ inches off the bottom of the triangle. Cut a 2-inch piece from the strip and tuck it under the triangle to create a trunk.
  • Spread the majority of the pesto sauce on the entire triangle, keeping ¼ inch of edges exposed. Sprinkle most of the Parmigiano-Reggiano cheese over the pesto. Lay the second triangle on top, adjust to fit, and trim any excess dough. Gently press edges together to seal and pat over the entire surface of the dough.
  • Slice ¾-inch wide horizontal strips on one side of the tree using a pizza wheel, starting from the edge towards the center, leaving the center part intact to create the trunk. For easier cutting, consider starting at the trunk and moving towards the edge. Repeat the process on the other side, aligning the cuts with the first side.
  • Gently twist each strip 3 to 4 times, increasing the twists as you reach the shorter pieces. It's okay if you can't twist the strips at the very top.
  • Spread the remaining pesto generously over the tree's center and any other areas you think could use more flavor. Place the silicone liner back on the baking sheet and grate the remaining cheese on top.
  • Bake in the middle of the preheated oven for 30-35 minutes until the pastry is fully cooked and nicely browned. Avoid undercooking.
  • Cool on a wire rack for 15 minutes before enjoying.
