Cheeseboard Christmas tree recipe

Impress your guests with a festive and fun Christmas tree made of pineapple and a variety of flavored cheeses - a modern twist on a classic 70s appetizer.
Ingredients:
  • 1 pineapple
  • Assorted hard cheeses, such as flavoured cheddars and aged Red Leicester (see notes)
  • 220g tub baby bocconcini, drained
  • 125g brie, cut into small wedges
  • 125g packet tiny toms tomatoes
  • 15 pitted Sicilian olives
  • Fresh rosemary sprigs, to serve
Instructions:
  • Trim off the top and bottom of the pineapple with a sharp knife. Stand it upright and slice off the skin. Trim the pineapple into a cone shape.
  • Cut the hard cheeses into 2cm cubes and slice the remaining cheeses into 1cm-thick slices. Use a 3cm star-shaped pastry cutter to create stars from the slices, reserving one slice to cut a 5cm star for decorating the pineapple tree.
  • Skewer hard cheese cubes, 3cm star-shaped cheese, bocconcini, brie, tomatoes, and Sicilian olives onto toothpicks. Arrange them on the pineapple, starting from the base, and work your way around and up the pineapple until it's fully covered. Fill any spaces with rosemary sprigs. Finally, top the pineapple Christmas tree with a 5cm cheese star on a toothpick before serving.
