Green veggie fritters

Versatile recipe using assorted greens and any soft cheese like Brie or Reblochon from your cheeseboard.
Ingredients:
  • 250 g leftover cooked Brussels sprouts
  • 2 handfuls of leftover cooked greens (100g)
  • 1/2 a clove of garlic
  • 1 lemon
  • a few sprigs of fresh dill
  • 50 g leftover cheese
  • 3 large free-range eggs
  • oil for frying
Instructions:
  • Shred the leftover cooked sprouts and greens and place them in a bowl. Add the crumbled cheese, finely chopped garlic, finely chopped dill, and finely grated lemon zest. Season with salt and pepper, then mix well. Crack in the eggs and combine. Heat oil in a large frying pan over medium heat. Spoon heaped tablespoons of the mixture into the pan, flatten them into patties, and fry for 2-3 minutes until the egg starts to set. Carefully flip and fry for an additional 2 minutes until the egg is fully cooked. Serve with lemon halves for squeezing.
