Delicious green veggie salad.
Ingredients:
  • 1 small broccoli, cut into florets
  • 100g sugar snap peas, trimmed
  • 165.00 ml fresh peas or frozen peas
  • 1/2 telegraph cucumber, cut into large cubes
  • 1 avocado, diced
  • 150g tub mixed salad sprout combo*
  • 62.50 ml finely chopped flat-leaf parsley leaves
  • 62.50 ml finely chopped mint leaves
  • Juice of 2 lemons
  • 100ml olive oil
  • 60.00 ml mixed salad seeds* (such as sunflower, sesame and pepita)
  • 100g feta, crumbled
Instructions:
  • Boil broccoli for 2-3 minutes and sugar snap peas along with fresh or frozen peas for 1-2 minutes. Then, refresh in cold water and drain.
  • Combine blanched vegetables with cucumber, avocado, sprouts, parsley, and mint in a large bowl. Whisk together juice and oil in another bowl, season it, and toss the dressing with the salad seeds. Finish by topping the salad with crumbled feta.
