Festive egg salad featuring sweet beets for a delicious pop of flavor and color, great for Easter or a flavorful lunch option.
Ingredients:
  • 2 small beets
  • 5 hard-cooked eggs, peeled and diced
  • 1 apple (such as Gala), cored and diced
  • 0.33333334326744 cup chopped walnuts
  • 1 tablespoon mayonnaise, or to taste
  • 2 teaspoons chopped fresh parsley
  • salt to taste

Instructions:
  • Set up a steamer in a pot with water just below it. Once the water boils, steam the beets covered for 10 minutes until tender. Allow them to cool, then trim, peel, and dice before transferring to a bowl.
  • Combine eggs, apple, walnuts, mayonnaise, parsley, and salt with beets in a bowl; mix well. Serve the salad on top of bread slices.
