Boost your veggie intake with a creative and refreshing green juice using leftover produce.
Ingredients:
  • 20g baby spinach leaves
  • 1 Granny Smith apple, cored, chopped
  • 1 Lebanese cucumber, chopped
  • 1 kiwifruit, peeled, chopped
  • 1 lime, peeled, chopped
  • 375ml coconut water
  • 2 tsp finely grated ginger
  • Lime slices, to serve
Instructions:
  • Combine the spinach, apple, cucumber, kiwifruit, lime, coconut water, and ginger in a blender until perfectly smooth.
  • Transfer the spinach mixture into serving glasses, garnish with lime slices, and serve promptly.
