Mouthwatering Greek Souvlaki with juicy pork, seasoned veggies, and homemade Tzatziki is a perfect choice for family barbecues, quick dinners, or lunchboxes. Pork's tenderness allows for a short marinating time, making it ideal for busy weeknights. Serve with salad and pita bread for a delicious 'help yourself' dinner.
Ingredients:
  • 600g pork scotch steak, cut into 2cm pieces
  • 60ml red wine
  • 42.00 gm lemon juice
  • 36.40 gm extra virgin olive oil
  • 20.00 ml dried oregano
  • 5.00 gm sweet paprika
  • 1 red capsicum, halved, seeded, cut into 2cm pieces
  • 1 red onion, cut into thick wedges
  • 4 large pita breads
  • 2 Lebanese cucumbers, trimmed, coarsely grated
  • 250g yoghurt
  • 125.00 ml finely chopped mint
Instructions:
  • Mix pork, wine, lemon juice, oil, garlic, oregano, and paprika in a glass or ceramic bowl. Seal with plastic wrap and refrigerate for 1 hour to marinate.
  • Squeeze out excess liquid from the cucumber by hand, then combine it with yoghurt, mint, and garlic in a bowl. Mix well and season with salt and pepper to taste.
  • Remove the pork from the flavorful marinade and alternate threading it onto skewers with capsicum and onion for a balanced combination of flavors on each skewer.
  • Preheat the barbecue or char-grill on high. Grill the pork skewers, turning occasionally, for 5-7 minutes until cooked through. Place on a plate, cover with foil, and let rest for 5 minutes before serving.
  • Heat the pita on the grill in foil for 2-3 minutes. Place the warm pita on serving plates, then add the pork skewers and tzatziki on top. Serve immediately.
