Create a mouthwatering Souvlaki pizza with a Mediterranean twist.
Ingredients:
  • 9.20 gm olive oil
  • 500g Grill lamb souvlaki strips
  • 1 x 400g Turkish pide, cut in half horizontally
  • 125.00 ml bought babaganoush
  • 100g baby spinach & rocket leaves
  • 2 Lebanese cucumbers, sliced
  • 125.00 ml natural Greek yoghurt
  • Sumac, to sprinkle
Instructions:
  • In a large non-stick frying pan over medium-high heat, heat half of the oil. Cook the lamb in 2-3 batches with the remaining oil for 2 minutes on each side until golden.
  • Preheat the grill on high while you toast both sides of the pide for about 2 minutes each, or until it turns a lovely light golden color.
  • Lay the pide slices cut-side up and generously spread with flavorful babaganoush. Top with spinach, rocket leaves, cucumber, and tasty lamb. Add dollops of creamy yogurt, season with freshly ground pepper, and sprinkle with fragrant sumac. Slice it up and enjoy!
