Ingredients:
  • 20.00 ml oregano leaves
  • 42.00 gm fresh lemon juice
  • 400g lamb loin
  • 4 flour tortillas
  • 1 Lebanese cucumber, finely chopped
  • 2 tomatoes, deseeded, finely chopped
  • 80g low-fat feta, crumbled
  • 82.50 ml low-fat natural yoghurt
  • Salt, to season
Instructions:
  • Mix together 3 teaspoons of oregano, lemon juice, oil, salt, and pepper in a shallow dish. Add the lamb and coat it well. Cover and refrigerate for 30 minutes to let it marinate.
  • Preheat the barbecue grill to medium-high heat. Grill the lamb for 4 minutes on each side, then cover and let it rest for 5 minutes before thinly slicing. Reduce the heat to medium-high, wrap the tortillas in foil, and grill for 5 minutes on each side.
  • In a bowl, mix cucumber, tomatoes, feta, and the rest of the oregano. Spread 1 tablespoon of yoghurt on one side of each tortilla. Fill with cucumber mixture, lamb, and fold in sides to roll up. Enjoy!
