Make tasty homemade souvlaki instead of ordering takeout.
Ingredients:
  • 1 tsp ground coriander
  • 2.50 gm ground cumin
  • 2.50 gm sweet paprika
  • 28.60 gm honey
  • 1 garlic clove, finely chopped
  • 40.00 ml pomegranate molasses (see note)
  • 20.00 ml chopped flat-leaf parsley
  • 62.50 ml chopped mint, plus extra to serve
  • 60ml olive oil
  • 800g lamb rump, cut into 2cm cubes
  • 4 vine-ripened tomatoes, chopped
  • 20.00 ml red wine vinegar
  • Warmed pita breads, to serve
  • Baba ghanoush (see note), to serve
  • Lemon wedges, to serve
Instructions:
  • Mix together the spices, honey, garlic, molasses, parsley, 1 tablespoon chopped mint, and 1 tablespoon oil in a bowl. Season with salt and pepper. Add the lamb to the bowl and toss well to coat. Cover and refrigerate for at least 30 minutes or overnight. If using bamboo skewers, soak 8 in water for 30 minutes.
  • Heat up a chargrill pan or barbecue to medium-high. Skewer the lamb onto 8 skewers. Grill the skewers for 10-12 minutes until charred but slightly pink in the middle. Rest them, loosely covered, while preparing the tomatoes.
  • Mix the tomatoes, vinegar, remaining mint, and oil together, then season to taste.
  • Enjoy succulent lamb alongside warm pitas, fresh tomatoes, creamy baba ghanoush, fragrant mint, and zesty lemon wedges.
