Tangy Greek skewers infused with white wine and lemon juice for a burst of flavor in every bite.
Ingredients:
  • 60ml (1/4 cup) white wine
  • 20.00 ml chopped fresh oregano
  • 500g lamb leg steaks, cut into 2cm cubes
  • 1 large red onion, cut into wedges
  • 1 red capsicum, halved, deseeded, cut into 2cm pieces
  • 1 green capsicum, halved, deseeded, cut into 2cm pieces
  • 2 rounds wholemeal pita bread, quartered, to serve
  • Bought low-fat tzatziki, to serve
Instructions:
  • Mix together the wine, lemon juice, oregano, and garlic in a glass or ceramic bowl. Add the lamb, ensuring it is well coated. Refrigerate the mixture for 30 minutes to allow the flavors to marinate.
  • Heat up a barbecue grill or chargrill on medium-high heat. Skewer the lamb, onion, red capsicum, and green capsicum alternately onto skewers.
  • Place the skewers on the grill and cook for 5-6 minutes, turning once, until they are perfectly charred and cooked through.
  • Enjoy the skewers alongside warm pita bread and creamy tzatziki.
