Cob loaf spinach dip recipe

Reviving the classic cob loaf with a spinach dip twist for ultimate comfort. A nostalgic favorite turned trendy, now celebrated at an annual festival. Get creative with your cob loaf game - try a bacon and cheese variation next!
Ingredients:
  • 450g cob loaf
  • 250g frozen spinach, thawed
  • 250g creamed cheese, softened
  • 300ml Light Sour Cream
  • 40g packet French onion soup mix
  • Crackers, to serve
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line a large baking tray with baking paper.
  • Trim the top off the cob loaf to create a lid that is 4cm thick. Hollow out the center of the loaf, making sure to leave a 1.5cm edge. Tear or roughly chop the removed bread pieces.
  • Pat dry spinach to remove excess moisture, then mix it with cheese, sour cream, and soup mix in a large bowl. Season with salt and pepper to taste.
  • Spread the mixture into a loaf shape and cover it with a lid before placing it on a prepared tray. Surround the loaf with bread pieces in a single layer. Bake for 20 minutes or until golden. Serve with cut vegetables and extra crackers, if desired.
