Spinach and ricotta dip

Create a decadent spinach cob loaf with just a few simple ingredients - the perfect party dip!
Ingredients:
  • 500g frozen spinach, thawed
  • 300g fresh ricotta
  • 300g carton sour cream
  • 82.50 ml chopped chives
  • 30g packet spring vegetable dried soup
  • 1 round cob bread loaf
Instructions:
  • Remove excess liquid from thawed spinach, then transfer to a large bowl. Combine with ricotta and sour cream until smooth. Fold in chives and dried soup mix. Season generously with freshly ground black pepper and mix until fully combined.
  • With a serrated knife, cut off the top of the loaf to create a 3 to 4cm-thick slice. Set aside. Hollow out the center of the loaf to make a bread "bowl". Fill the loaf with spinach and ricotta mixture, then cover with the bread lid. Serve immediately.
