Try this twist on lasagna with a melty blend of mozzarella, marinara, Italian sausage, ricotta, and spinach for a delicious and unconventional dinner option.
Ingredients:
  • 1 cup chopped frozen spinach (from a 10-ounce package), thawed
  • 1 cup whole-milk ricotta cheese (from an 8-ounce container)
  • 1/2 teaspoon black pepper
  • 8 ounces pre-shredded low-moisture part-skim mozzarella cheese (about 2 cups), divided
  • 3/4 teaspoon kosher salt, divided
  • 1 tablespoon olive oil
  • 1 pound bulk mild Italian sausage
  • 1 tablespoon dried Italian seasoning
  • 2 small garlic cloves, chopped
  • 1 1/2 cups jarred marinara sauce (from a 24-ounce jar), such as Rao’s
  • 1/4 cup chopped fresh basil
  • 8 slices toasted garlic bread (such as The Best Garlic Bread )
Instructions:
  • Preheat the oven to 350°F for the perfect cooking temperature.
  • Prepare the spinach ricotta: Drain the spinach in a colander over a bowl, press gently with a paper towel to remove excess moisture. Discard the liquid, then mix the spinach, ricotta, pepper, 1 1/2 cups mozzarella, and 1/2 teaspoon salt in the bowl until well combined. Set aside.
  • Prepare the sausage layer: Heat oil in a large nonstick skillet over medium-high heat. Cook the sausage until browned and slightly crispy, breaking it apart with a wooden spoon, about 7 to 10 minutes. Add Italian seasoning and garlic, cook until garlic is toasted, for about 3 to 5 minutes. Drain sausage on a paper towel-lined plate. Keep the skillet dirty. Simmer marinara sauce in the same skillet, then add the sausage back in and stir to combine.
  • Create the dip: Place the saucy sausage in a 10-inch cast-iron skillet or 2-quart baking dish. Spoon the spinach-ricotta mixture over it evenly. Finish by sprinkling the remaining 1/2 cup mozzarella on top.
  • Bake the lasagna dip in the oven until the cheese is melted and the dip is bubbling, which should take around 25 to 30 minutes. After baking, add a sprinkle of fresh basil and serve alongside toasted garlic bread slices. You can prepare and assemble the lasagna dip a day ahead and store it covered in the refrigerator.
