Caprese-inspired tart with basil pesto, roasted cherry tomatoes, and fresh mozzarella on flaky puff pastry.
Ingredients:
  • 1 pint cherry tomatoes, halved
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • salt and freshly ground black pepper to taste
  • 1 sheet frozen puff pastry, thawed
  • 3 tablespoons basil pesto
  • 1 (8 ounce) package fresh mozzarella cheese, sliced
Instructions:
  • Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  • Toss cherry tomatoes with olive oil, balsamic vinegar, salt, and pepper in a bowl until fully coated. Spread tomatoes evenly on a baking sheet.
  • Roast in the oven until the skins wrinkle and the insides are soft, for 15 to 20 minutes. Allow to cool.
  • Prepare a fresh baking sheet lined with parchment paper. Gently lay the puff pastry sheet on top. Score a border 1 inch from the edges, ensuring not to cut through completely. Use a fork to prick the inner rectangle multiple times.
  • Bake in the preheated oven for 10 minutes until slightly puffed up.
  • Spread a vibrant layer of pesto in the center, then generously cover it with half of the savory tomatoes. Sprinkle gooey mozzarella cheese on top before artfully distributing the remaining tomatoes over the cheese.
  • Continue baking until the pastry turns a rich golden brown and the cheese is perfectly melted, for an additional 5 to 10 minutes.
