"Transform a Caprese salad into a delightful and effortless dish with just five ingredients."
Ingredients:
  • 2  tablespoons, plus 1 1/2 teaspoons kosher salt, divided
  • 16 ounces farfalle (bow-tie) pasta
  • 1/2 cup extra-virgin olive oil
  • 4 cups cherry tomatoes (about 20 ounces)
  • 1/2 teaspoon black pepper, plus more for serving
  • 3 tablespoons red wine vinegar
  • 1 (8-ounce) container fresh mozzarella cheese pearls in water, drained
  • 1 cup fresh basil leaves, roughly torn
Instructions:
  • Prepare the pasta: In a large saucepan over medium-high heat, carefully heat 4 quarts of water with 2 tablespoons of salt until boiling. Add the farfalle pasta and cook until al dente following the package instructions, approximately 10 minutes. Drain the pasta and place it in a spacious bowl.
  • Sauté the tomatoes: In a large nonstick skillet over medium heat, cook the tomatoes, pepper, and 1 1/2 teaspoons of salt, stirring occasionally, until the tomatoes start to burst, about 3 minutes. Stir in the vinegar. Continue cooking and stirring until the sauce thickens slightly and the tomatoes break down, about 6 minutes.
  • Combine the tomato mixture with the pasta and mix well. Add the mozzarella pearls and basil, and sprinkle with extra black pepper if desired.
