Caprese Pasta with Thai Basil

Whip up a refreshing caprese pasta with Thai basil and zesty lemon balsamic dressing for a perfect summer lunch.
Ingredients:
  • 1 pound spaghetti
  • 1.5 cups cherry tomatoes, halved
  • 0.5 cup olive oil
  • 3 tablespoons lemon-infused white balsamic vinegar
  • 2 cloves garlic, chopped
  • 0.33 cup chopped Thai basil
  • 1 (8 ounce) container small mozzarella balls in oil, halved
  • salt and freshly ground black pepper to taste
Instructions:
  • Bring a pot of salted water to a rolling boil. Cook spaghetti until al dente, stirring occasionally, for about 12 minutes.
  • In a large mixing bowl, toss together cherry tomatoes, mozzarella balls, olive oil, balsamic vinegar, garlic, and Thai basil until well combined. Season with salt and pepper to taste.
  • After cooking the pasta, gently discard the water and generously spoon the cherry tomato mixture over it.
