Elevate your BBQ with a satisfying Caprese Pasta Salad featuring fresh tomatoes, basil, mozzarella, and al dente pasta—summer in every bite!
Ingredients:
  • 1/2 pound small shaped pasta, such as orecchiette, farfalle, or campanelle
  • 1 tablespoon + 1/2 teaspoon Kosher salt
  • 1/3 cup olive oil
  • 3 to 5 garlic cloves, minced
  • 1 teaspoon freshly ground pepper
  • 1 pound (3 cups) cherry or grape tomatoes, halved
  • 8 ounces mozzarella, torn
  • 10 large fresh basil leaves, torn
Instructions:
  • Boil water in a large pot with 1 tablespoon of kosher salt. Cook pasta until al dente according to package instructions to avoid it breaking apart later.
  • Prepare the sauce by combining oil, minced garlic, pepper, and 1/2 teaspoon of kosher salt in a large serving bowl.
  • After the pasta is cooked, drain it well in a colander and gently tap to remove excess water. Transfer drained pasta to the bowl with olive oil and toss to coat evenly.
  • As the pasta cools, tear the mozzarella into nickel or quarter-sized pieces. Toss the slightly warm pasta before adding the cheese. Add torn mozzarella, halved tomatoes, and torn basil leaves to the pasta.
  • Toss everything gently in olive oil to ensure it's well coated. Enjoy cold, warm, or at room temperature.
