Caprese Sausage Pasta Salad

Indulge in Italian flavors with Betty Crocker® Suddenly Salad® basil pesto pasta salad mix. Featuring sausage, cheese, tomatoes, and pine nuts for a delicious meal.
Ingredients:
  • 1 box (7.6 oz) Betty Crocker™ Suddenly Salad® basil pesto pasta salad mix
  • 1/4 cup pine nuts
  • 1/3 cup cold water
  • 3 tablespoons olive oil
  • 1 cup cherry or grape tomatoes, cut in half
  • 1 cup bocconcini (small fresh mozzarella cheese balls) (7 oz), cut into bite-size pieces
  • 4 precooked smoked Italian sausage links, thinly sliced (about 10 oz)
  • 2 tablespoons chopped fresh basil leaves
Instructions:
  • Fill a 3-quart saucepan two-thirds full of water and bring to a boil. Add pasta and gently boil for 12 minutes, stirring occasionally. Drain the pasta, rinse with cold water to cool, and drain well before serving.
  • Toast pine nuts in a dry heavy skillet over medium heat for 3 to 5 minutes, stirring constantly until they turn light brown.
  • Take a large bowl and mix the seasoning mix from the packet with cold water and oil. Add in tomatoes, cheese, and sausage. Finally, stir in the cooked pasta until everything is well combined.
  • Chill in the refrigerator for about 1 hour until cold. Top with pine nuts and fresh basil before serving.
