Caprese-inspired roasted tomato with couscous, melty mozzarella, and fragrant basil - a colorful and flavorful side dish.
Ingredients:
  • 1 cup boiling water
  • 1 cup couscous
  • 4 tomatoes
  • 16 leaves fresh basil
  • 8 ounces fresh mozzarella cheese, diced
  • 0.25 cup balsamic vinegar, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease a baking dish.
  • Place couscous in a bowl and cover it with boiling water. Seal the bowl with plastic wrap and let the couscous soak until all the water is absorbed, around 5 minutes.
  • Prepare the tomatoes by slicing off the tops and a small slice from the bottoms to ensure they stand upright. Use a spoon to hollow out and discard the tomato innards before placing them in the baking dish.
  • Roast tomatoes in the preheated oven until they develop a light char around the edges, for approximately 20 minutes.
  • Place 4 basil leaves inside each tomato, lining the inner walls.
  • Combine mozzarella cheese with couscous, then use the mixture to stuff the tomatoes. Finish by drizzling balsamic vinegar over the stuffed tomatoes.
