Delicious pistachio couscous - a quick and easy side dish with added crunch.
Ingredients:
  • 200g instant couscous
  • 400ml chicken style liquid stock
  • 40.00 gm unsalted butter
  • 125.00 ml green olives, pitted, sliced
  • 1/4 preserved lemon, rind only, chopped
  • 40.00 ml chopped flat-leaf parsley
  • Slivered pistachios, to serve
Instructions:
  • In a large bowl, combine couscous. Bring the stock to a boil and pour over the couscous. Add butter and stir until melted.
  • Let it rest for 15 minutes before gently folding in olives, preserved lemon, and parsley.
  • Season generously and sprinkle with the pistachios before serving.
