Try this vibrant and fresh twist on a quick dinner idea - meal-in-a-pepper! No pre-cooking required for a delicious and colorful meal.
Ingredients:
  • 1 box (5.7 oz) roasted garlic and olive oil-flavored couscous
  • 1 1/4 cups water
  • 2 large red bell peppers, cut in half lengthwise, seeds and membranes removed
  • 1 cup chopped fresh spinach
  • 1/4 cup grated Parmesan cheese
Instructions:
  • Prepare couscous by boiling in water as per package instructions, without adding oil, then cover to keep it warm.
  • 1. Place bell pepper halves in an 8-inch square (2-quart) microwavable dish and add 2 tablespoons of water. Cover with microwavable waxed paper and microwave on High for 3 to 4 minutes until crisp-tender.
  • Combine the vibrant spinach and creamy cheese with the fluffy couscous, then stuff the flavorful mixture into the pepper halves.
