Cheesy Caprese pasta bake recipe

Cheesy bocconcini pasta bake - simple, indulgent, guaranteed dinner win.
Ingredients:
  • 500g dried rigatoni pasta
  • 500g cherry tomatoes, halved
  • 4 green shallots, thinly sliced
  • 300g (3 cups) pre-grated pizza cheese
  • 500g bottle onion and roast garlic pasta sauce
  • 1 bunch fresh basil, leaves picked, plus extra, to serve
  • 200g bocconcini, drained, coarsely torn
Instructions:
  • Boil the pasta in a generously salted large saucepan until al dente following the package instructions. Drain the pasta and preheat the grill to high.
  • Pat dry the pan. Heat oil over medium-high heat. Saute tomato and shallot for 3-4 minutes until tomatoes soften. Lower heat, toss in cooked pasta, pizza cheese, and pasta sauce. Mix well. Take off heat. Stir in basil leaves and season.
  • Transfer the pasta mixture to a 20 x 35cm baking dish and cover with bocconcini. Grill for 5-8 minutes until the cheese is melted and bubbly.
