Hot Caprese dip

Impress guests with a quick and delicious cheesy Caprese dip in just 30 minutes.
Ingredients:
  • 180g tub mini bocconcini, drained
  • 125g baby roma tomatoes, halved
  • 60g (1/4 cup) semi-dried tomatoes, chopped
  • 40g (1/3 cup) coarsely grated mozzarella
  • 62.50 ml shredded fresh basil leaves
  • 1 garlic clove, crushed
  • 18.20 gm extra virgin olive oil
  • Fresh basil leaves, to serve
  • Bagel crisps, to serve
Instructions:
  • Preheat your oven to 200C/180C fan forced. Grease a 750ml (3 cup) baking dish. In a large bowl, mix bocconcini, roma tomato, semi-dried tomato, mozzarella, basil, and garlic. Transfer mixture to the dish and drizzle with oil. Place on a baking tray and bake for 15 minutes until the cheese melts.
  • Preheat the grill on high. Place the dip underneath and cook for 5 minutes or until the cheese turns golden. Sprinkle with basil leaves and serve promptly with bagel crisps.
