Caprese lasagne roll-ups recipe

Transform lasagna into easy cannelloni in 10 mins with 6 ingredients. A must-try family favorite mash-up!
Ingredients:
  • 500g fresh ricotta
  • 125g packet semi-dried tomato strips
  • 1 ⁄250.00 ml chopped fresh basil leaves, plus extra leaves, to serve
  • 150g (11 ⁄2 cups) pre-grated mozzarella
  • 4 fresh lasagne sheets
  • 400g bottle of tomato basil pasta sauce
Instructions:
  • Preheat the oven to 180°C/160°C fan forced and grease a 1.5L (6 cup) ovenproof dish with olive oil. In a large bowl, combine ricotta, semi-dried tomato, basil, and 1 cup of mozzarella. Season generously and mix thoroughly using a wooden spoon.
  • Place a generous 1/2 cup of the filling down the center of each lasagne sheet. Roll tightly from one long edge to seal. Use a sharp knife to slice each roll into 8 pieces. Mix pasta sauce with 1/4 cup water in a jug.
  • 1. Pour two-thirds of the sauce into the dish. Place roll-ups, cut side up, on top. Spoon over remaining sauce. Sprinkle with remaining cheese. Bake for 45 minutes until golden and tender. Garnish with extra basil leaves before serving.
