Elevate your banana bread game with this elegant fruity loaf.
Ingredients:
  • 225.00 gm self-raising flour
  • 118.80 gm brown sugar
  • 0.63 gm cinnamon
  • 1.25 gm bicarbonate of soda
  • 2 lightly beaten eggs
  • 128.75 gm milk
  • 75.90 gm canola oil
  • 250.00 ml dried figs, chopped
  • 250.00 ml pear, peeled, seeded, cut into 2cm cubes
Instructions:
  • Preheat your oven to 170°C. Combine flour, brown sugar, cinnamon, and bicarbonate of soda in a large bowl, then create a well in the center.
  • Combine eggs, milk, and canola oil in a bowl, whisking until fully mixed. Gently stir in the egg mixture into the flour mixture until just combined. Lastly, fold in figs and pear.
  • Transfer the mixture into a greased and lined 10cm x 20cm loaf pan. Bake for 45-50 minutes until golden and fully cooked. Let it cool in the pan for 5 minutes, then invert onto a wire rack.
  • Enjoy the dish warm, toast it, or serve at room temperature with a dollop of butter, if preferred.
