Sweet fig and pear paste, an ideal cheese pairing for cocktail parties.
Ingredients:
  • 6 just-ripe figs, coarsely chopped
  • 4 just-ripe williams pears, peeled, cored, chopped
  • 60ml water
  • 500g white sugar (approximately)
Instructions:
  • In a large saucepan over high heat, mix the figs, pear, and water. Bring to a boil, then reduce the heat to low and simmer for 30 minutes, stirring occasionally until tender. Let it cool for 10 minutes before proceeding.
  • Process mixture in a food processor until smooth, then measure the weight. Use an equal amount of sugar to match the weight of the puree for this recipe.
  • In a heavy-based saucepan over medium-low heat, mix the puree and sugar until the sugar dissolves, for about 10 minutes. Lower the heat and cook occasionally stirring for 3 hours until the mixture thickens. Let it cool for 30 minutes before using.
  • Prepare the ramekins by greasing them and then evenly distribute the puree, smoothing the surface. Cover loosely with baking paper and let sit for 2 days until dry to the touch and thickened. Unmold the contents from the ramekins and cover with plastic wrap before storing in the fridge.
  • Present the mixture elegantly on a cheese platter alongside cheese and biscuits for a delectable serving.
