Prickly pear cactus fruit sorbet with a zesty lime twist.
Ingredients:
  • 3 cactus figs
  • 1 cup water
  • 0.5 cup white granulated sugar
  • 2 tablespoons fresh lime juice
Instructions:
  • Peel the outer skin off the cactus figs to reveal the light green flesh. Press the flesh through a mesh sieve into a bowl to extract the juice while removing the seeds and pulp.
  • In a saucepan over medium heat, stir together water and sugar until thickened, about 5 minutes. Remove from heat and let cool for about 15 minutes.
  • Combine the refreshing cactus juice and zesty lime juice with the sugar water, ensuring everything is well mixed. Let it chill for one hour to enhance the flavors.
  • Pour the refreshing cactus-lime mixture into an ice cream maker and freeze as per the manufacturer's instructions, which typically takes around 20 minutes. Once ready, transfer the delectable creation into an airtight container and freeze until perfectly firm, approximately 4 hours.
