Try this flavorful Mexican cactus salad with nopalitos, tomatoes, onions, and radishes. A delicious and budget-friendly dish!
Ingredients:
  • 1 pound (450 g) fresh chopped nopalitos
  • 1 pound cherry tomatoes, quartered (about 3 cups)
  • 1 cup chopped red radishes
  • 1 cup finely chopped red onion
  • 3 tablespoons lime juice
  • 1 tablespoon extra virgin olive oil
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup chopped cilantro
Instructions:
  • Prepare the nopalitos: Boil salted water, add nopalitos, cook for 1 minute, strain using a fine mesh sieve, then rinse with water for 1 minute.
  • Combine all ingredients in a bowl: Mix washed and drained nopalitos with chopped tomatoes, radishes, and onion. Add lime juice, olive oil, salt, and pepper, then gently stir in cilantro.
