Mexican cactus and potato side dish with tomatoes, onions, and jalapeños. Cactus tastes like green beans when cooked.
Ingredients:
  • 3 medium potatoes, peeled and cut into strips
  • 1 (16 ounce) jar sliced nopalitos, drained and rinsed
  • 1 medium onion, diced
  • 1 small tomato, diced
  • 1 medium jalapeño pepper, minced
  • salt to taste
Instructions:
  • In a large skillet over medium heat, warm oil. Add potatoes, cover, and cook for about 10 minutes until they start to soften, stirring occasionally. Add nopalitos, onion, tomato, jalapeño, and salt. Cook for another 10 minutes, stirring occasionally, until the onion is soft, translucent, and the potatoes are tender.
