Impress guests with a vibrant cactus, zucchini, and red pepper salad drizzled in a zesty cilantro vinaigrette.
Ingredients:
  • 1/2 cup olive or vegetable oil
  • 1/4 cup white wine vinegar
  • 1 tablespoon chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 8 cups water
  • 1 tablespoon salt
  • 1/2 lb fresh prickly pear cactus pad, peeled, cut into 1/2-inch pieces
  • 2 small zucchini, thinly sliced
  • 1 medium red bell pepper, cut into 1/4-inch strips
Instructions:
  • In a small bowl, whisk together oil, vinegar, cilantro, 1/2 teaspoon salt, garlic, and pepper until fully combined.
  • In a 3-quart saucepan, bring salted water to a boil. Add cactus and boil for 5 minutes. Drain and rinse with cold water, repeating the rinsing process twice.
  • Combine the cactus, zucchini, and bell pepper in a large bowl. Drizzle vinaigrette over the vegetables and toss everything together until well mixed.
