Sugar-free banana bread with walnuts for added crunch.
Ingredients:
  • 3 whole eggs
  • 157.50 gm melted coconut oil
  • 82.50 gm Monkfruit Golden Sweetener
  • 4.40 gm vanilla extract
  • 390.00 gm mashed ripe bananas
  • 200.00 gm almond meal
  • 1.25 gm ground cinnamon
  • 1 1/2 tsp bi carbonate soda
  • 1.20 gm salt
  • 86.25 gm chopped walnuts
Instructions:
  • Preheat your oven to 170°C while you generously grease a 9x5 inch loaf pan.
  • Whisk together almond meal, cinnamon, baking soda, and salt in a medium bowl. Set aside.
  • In a spacious bowl, whisk eggs, coconut oil, sweetener, and vanilla together for 2 minutes until well combined.
  • Incorporate the mashed bananas into the almond meal mixture, then gently fold in the chopped walnuts until evenly distributed.
  • Transfer the mixture into a greased pan, then generously sprinkle with extra cinnamon or banana slices. Bake for 50-55 minutes, or until a toothpick comes out clean when inserted.
  • Allow to cool for 10 minutes, then slice into 8 delicious pieces before serving.
