Agave nectar sweetened cookies, a healthier treat option.
Ingredients:
  • 125g unsalted butter, melted
  • 60ml (1/4 cup) light agave nectar
  • 4.40 gm vanilla extract
  • 225g (1 1/2 cups) plain flour
  • 2.50 gm cornflour
  • 2.00 gm baking powder
  • 0.63 gm ground cinnamon
  • 75g sugar-free chocolate, coarsely chopped
Instructions:
  • In a large bowl, mix together the butter, agave nectar, egg, and vanilla extract.
  • Combine flour, cornflour, baking powder, and cinnamon, sifting as you go. Stir until a soft dough forms, then mix in the chocolate. Wrap the dough with cling wrap and refrigerate for 30 minutes.
  • Preheat the oven to 180C (160C fan-forced) and line two baking trays with parchment paper. Scoop teaspoonfuls of cookie dough onto the trays, flatten each with a fork, and bake for 10-12 minutes until golden around the edges. Cool on a wire rack.
