Healthy banana bread with whole-grain cereal, egg whites, and fat-free yogurt.
Ingredients:
  • 1 1/4 cups sugar
  • 2 tablespoons margarine, softened
  • 3 egg whites
  • 1 1/2 cups mashed ripe bananas (3 to 4 medium)
  • 2/3 cup Yoplait® Fat Free plain yogurt (from 2-lb container)
  • 1 teaspoon vanilla
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups Whole Grain Total® cereal, slightly crushed
Instructions:
  • Position the oven rack in the lower position to ensure the pans are centered. Preheat the oven to 350°F. Grease only the bottoms of two 8x4-inch loaf pans or one 9x5-inch loaf pan with shortening.
  • Combine sugar and margarine in a large bowl. Blend in egg whites until well incorporated. Mix in bananas, yogurt, and vanilla until smooth. Gently fold in remaining ingredients, excluding cereal, until just combined. Stir in cereal. Transfer mixture to pans.
  • Bake 8-inch loaves for about 1 hour, 9-inch loaf for about 1 hour and 15 minutes, or until a toothpick inserted in the center comes out clean. Let cool for 5 minutes, then gently loosen the sides of the loaves from the pans and remove. Allow the loaves to cool completely, approximately 1 hour.
