Chocolate Swirl Banana Bread with Whole-Grain Cheerios boost.
Ingredients:
  • 2 cups Banana Nut Cheerios™ cereal
  • 3/4 cup sugar
  • 1/4 cup canola or vegetable oil
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla
  • 1 cup mashed very ripe bananas (2 medium)
  • 2 cups Gold Medal™ all-purpose flour
  • 1/4 cup unsweetened baking cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup miniature semisweet chocolate chips
  • 1/2 cup Banana Nut Cheerios™ cereal
Instructions:
  • Preheat your oven to 350°F. Grease only the bottom of a 9x5-inch loaf pan with cooking spray. Place 2 cups of cereal in a resealable food-storage plastic bag or between sheets of waxed paper; crush with a rolling pin until you have 3/4 cup. Set aside.
  • In a large bowl, gently mix sugar and oil with an electric mixer until combined. Add buttermilk, vanilla, and egg and mix until just blended. Incorporate bananas next. Gradually fold in flour, cocoa, baking soda, and salt until fully combined. Stir in 3/4 cup crushed cereal and chocolate chips. Spread the mixture evenly into the pan.
  • Crush 1/2 cup of cereal in a resealable plastic bag or between waxed paper sheets using a rolling pin. Sprinkle the crushed cereal over the batter in the pan and lightly press it down.
  • Bake for 1 hour 10 minutes to 1 hour 20 minutes until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then transfer to a cooling rack. Allow it to cool completely for about 2 hours.
