Ingredients:
  • 3 tablespoons brown sugar
  • 10 bananas, peeled and sliced lengthwise
  • 2 cups whole wheat flour
  • 2 cups toasted wheat germ
  • 3 cups rolled oats
  • 1 cup packed brown sugar
  • 1 cup light margarine
  • 1 tablespoon cinnamon
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Begin by sprinkling 3 tablespoons of brown sugar into a small saucepan or skillet. Melt the sugar over medium heat. Mix in water until sugar dissolves completely. Heat the mixture until it reaches 234-240°F (112-116°C) or until a small amount dropped into cold water forms a soft ball that flattens when removed. Pour the syrup into a round baking dish or deep dish pie plate, ensuring the bottom is evenly coated.
  • Create a layer of bananas over the caramelized sugar. In a medium bowl, combine whole wheat flour, wheat germ, oats, and 1 cup of brown sugar. Blend in the margarine by hand, forming small crumbly pieces of dough. Spread half of this mixture over the bananas and press down gently. Layer the remaining bananas on top and sprinkle with half of the cinnamon. Cover with the rest of the dough, press down to smooth the pie, then sprinkle the remaining cinnamon over the top.
  • Bake for 45 minutes in the oven until the pie topping is golden brown and a toothpick inserted in the center comes out clean.
