Brazilian slow cooker black bean stew with bacon and sauteed veggies.
Ingredients:
  • 1 (8 ounce) package dry black beans
  • 2.5 quarts water
  • 3 tablespoons olive oil
  • 3 cloves garlic, peeled and minced
  • 1 large onion, chopped
  • 1 tomato, cubed
  • 1 carrot, cubed
  • 0.5 pound bacon strips, diced
  • 1 tablespoon chopped fresh parsley
  • salt and pepper to taste
Instructions:
  • In a pressure cooker, cover the beans with water and soak for 12 hours or overnight.
  • Pour 2 1/2 quarts of water into the pressure cooker, filling it about 2/3 full. Cover the cooker, cook for 30 minutes at 10 pounds pressure, then remove from heat and set aside.
  • In a medium saucepan over medium heat, saute the garlic and onion in heated oil until tender. Add tomato and carrot, cook for 5 minutes, then stir in bacon and cook until crisp and browned.
  • Combine the vegetable and bacon mixture with the black beans in the pressure cooker. Cover and cook under high pressure for about 10 minutes. Finish with a sprinkle of parsley and season with salt and pepper before serving.
